A White Christmas cocktail the ultimate cocktail for Christmas. But it is not only very delicious with Christmas, for example as a welcome drink: you can enjoy it all year round. Just because the cocktail is white, and decorated with pomegranate and a sprig of mint, that just gives the Christmas an extra nice accent by the colour combination. The taste of coconut combined with lime is always delicious, and in this white Christmas cocktail, that combination is even more effective.
For four people you need:
4 nice cocktail glasses
200 ml of coconut milk from a can or package
2 squeezed limes
150 ml coconut rum (for example Belmont Estate Golden Coconut)
4 small sprigs of mint (you can also take sprigs of rosemary)
A bowl of finely grated coconut
Some crushed ice
Pomegranate seeds (tray)
Put the four cocktail glasses in the freezer for about an hour. Then mix the coconut milk with the coconut and lime juice in a blender or cocktail shaker. Put some grated coconut on a saucer. Remove the glasses from the freezer, slightly wet the edges and press them into the coconut. That way you immediately have a festive glass.
Then put some crushed ice in a glass and pour the cocktail over. You get crushed ice by putting some ice cubes in a tea towel and then gently storing it with a hammer for example. Then divide the mix into the glasses. Sprinkle some pomegranate over the glasses. Then you put in a sprig of mint and you can drink the cocktails. This delicious cocktail is best when it is served ice cold.
