Summer pasta with zucchini, lemon and pine nuts

This summery pasta with zucchini, lemon and pine nuts is the best for summer and is at the top of my list of favorite pasta recipes. This lukewarm salad with delicious ingredients such as zucchini, lemon and pine nuts is simple to make and very quickly finished and looks very nice. A pasta salad always does well in the summer. The fresh taste of the lemon makes it a must for a hot day. Because of the large amount of raw zucchini it is not heavy on the stomach, and it is also super healthy. Also a delicious light meal.
For this recipe you need a mandolin or a spiral cutter.
The ingredient list for two people:

1 pack of fresh linguini
1 large zucchini in spirals
The juice of half a lemon
A clove of garlic
A good dash of olive oil
About 50 grams of pine nuts
Parmesan cheese ( a LOT)
A handful or slightly more chopped parsley
Salt and pepper to taste

Cook the linguini according to the instructions with a little salt until done. Make spirals of the zucchini and put them in a bowl with the other ingredients, except for the parsley, pine nuts and Parmesan cheese. Stir everything well (I often do that with my hands). Fry the pine nuts in a dry frying pan until they are light brown (always be careful because you can burn them very quickly).

Mix the warm pasta with the raw zucchini. Keep a little bit of cooking water handy if you want to make the pasta slightly less dry.

Finally sprinkle the parsley, the pine nuts and a good amount of Parmesan cheese over it. Very nice with this summery pasta with zucchini, lemon, and pine nuts is a tomato salad with basil, or tomatoes that you have grilled in the oven. This salad can also be combined well with smoked or baked salmon. Lovely a nice glass of white wine!
