Quinoa salad with black beans

Quinoa salad with black beans is the ultimate summer salad. Perfect for an evening meal, but you can also think of serving the salad at a party or buffet as you can easily make a large amount of it. The salad is also very festive because of the beautiful bright colors and is easy to prepare a day in advance. You make it with black beans. These are a real superfood since they contain a lot of fiber, protein, vitamins, and minerals. In addition, the bean is also very tasty and has a fine bite. I find them tastier than any other beans and also like to use them in dishes.

For this summer salad you need:

1 can of black beans rinsed and drained
1 red pepper
1 mango in small peaces
200 grams of quinoa
2 tablespoons of olive oil
Juice of 1 lemon
Sea salt
Chilipepper
Half bunch spring onions
Half bunch parsley

First, you cook the quinoa according to the instructions. Drain any excess moisture and let it cool. Then add the olive oil, the lemon, the salt and the chilli pepper together in a bowl and stir well. Then remove the seed lists from the peppers and cut them into nice little pieces. Slice or cut the spring onions and the parsley. Everything preferably not much bigger than the beans. Keep some parsley behind to sprinkle last over the salad.
Then add everything to the olive oil mixture in a nice bowl and stir well. Place the bowl covered in the refrigerator and allow to cool for several hours. It is best if you do this a few hours so that all flavours can mix well. Remove the dish from the refrigerator, stir again, and sprinkle the retained parsley over it. This way you will have a delicious salad for a beautiful summer day.
