This appetizer with avocado is deliciously fresh, healthy, and super easy to make. I ate avocado prepared this way for the first time in Rwanda last year and thought it was super tasty. I have already prepared it several times at home. So far everyone I have put it before has been very enthusiastic about the dish. Avocado is quite powerful by itself and certainly if you fill it again with, for example, tuna, but if you make the avocado with a vinaigrette, it will become light and fresh.
Below is the list of ingredients required for four people:
3 tablespoons of white wine vinegar
1 tablespoon of spicy mustard
4 tablespoons of olive oil
Freshly ground pepper
1 tablespoon of freshly squeezed lemon juice
1 large shallot: finely chopped
2 ripe avocados
Various fresh herbs, very finely cut. For example, parsley, chervil, dill, coriander, or other green herbs, to taste.
Mix the lemon juice, white wine vinegar and mustard well until a smooth emulsion is formed. Then slowly stir in the olive oil. Then add the salt, pepper and shallot. Mix again. Finally, stir in the green herbs.
Then cut the avocados in half and remove the pips. Place the four halves on a plate or dish with some lettuce and pour the vinaigrette in each hole. You can now serve the dish immediately. It is also nice to serve it at lunch.
